Shortbread for Cecilia

(Cecilia’s favourite cookie at our house)
Preheat oven to 300F
~ Cream until very light:

1 cup butter

~ Blend in:

2/3 cup lightly packed brown sugar

Beat until light and fluffy.
~ Stir in gradually:

2 ¼ cups all purpose flour

Knead well to blend in last of the flour.

Sticky Toffee Pudding (cake, really)

Pudding/Cake:

1 cup boiling water
1 10 ounce container pitted dates
1 tsp baking soda
1 ½ cups all purpose flour
1 tsp baking powder
Pinch salt
½ cup butter at room temperature
5 Tbsp sugar
2 large eggs
1 tsp vanilla extract

Toffee Sauce:

½ pint heavy cream
1 cup light brown sugar
¼ cup butter

Ruby’s Dried Cranberry Pistachio Biscotti

These are quite a lot softer than typical biscotti.

1 cup shelled pistachios (about 2 cups unshelled), preferably unsalted
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup butter, at room temperature
1 cup granulated sugar
2 tsp finely grated orange peel
2 eggs
1 tsp vanilla

Jan’s Rolled Biscuits

Position a rack in the centre of the oven. Preheat the oven to 450F. Have ready a large ungreased baking sheet.
Whisk together thoroughly in a large bowl:

2 cups all-purpose flour
2.5 teaspoons baking powder
.5 to .75 teaspoons salt

Drop in:

Maple Roasted Almonds

6 cups whole almonds, skin on
1/2 cup maple syrup
2 Tbsp sea salt
1+ 1/2 Tbsp vegetable oil
1. Preheat oven to 350F
2. Toss almonds with syrup and salt; let sit for 1/2 hour. Add oil and toss to coat.

Brie with Cranberry Chutney

one 8” Brie round
Chutney:
1 cup cranberries (fresh or frozen)
1/4 cup packed brown sugar
1 Tbsp water
2 Tbsp chopped green onions
2 tsp lime juice
1 tsp chopped pickled jalepeno pepper
salt and pepper, to taste
Garnish:
toasted pecan halves

Unckie Dunckie’s Tuna Curry

3 Tbsp olive oil
1-2 green peppers, chopped
1-2 leeks, sliced
3-5 garlic cloves, chopped
1-3 Tbsp curry powder
1 can coconut milk
squeeze fresh lime juice
big handful chopped coriander/cilantro (if you like it)
1-3 tins of drained water packed tuna
1 tin chick peas, rinsed and drained

Greek Salad with Oregano Marinated Chicken

For the chicken:

1 lemon, juiced
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
A couple good pinches salt
10 grinds black pepper
4 (6 to 7-ounce) boneless skinless chicken breasts

For the dressing:

1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 lemon, juiced
2 cloves garlic, chopped
1 teaspoon dried oregano

Chicken and Rice Casserole

6-8 chicken breasts, cooked and cubed (preferably roasted)
butter
3-4 stalks celery, chopped
1 onion, chopped
3 cups dry parboiled rice, cooked with appropriate amount of stock
2 cans cream of chicken soup
8 oz. sour cream
buttered breadcrumbs (or other favourite casserole topping), optional
Cook rice according to package directions using stock instead of water.

Ann Sisler’s Antipasto

2 tins tuna
1 10 ounce chili sauce
1 cup ketchup
1 jar chopped green olives
1 tin mushrooms, chopped
1/2 green pepper, finely chopped
3-5 green onions, finely chopped
1-2 stalks celery, finely chopped
Mix all of above.  Put into jars and refrigerate.
