Citrus Vinaigrette (and salad to pour it onto):

Juice of 1 lemon
Juice of 1 orange
1 Tbsp honey mustard
juice left from grapefruit that’s been peeled and sectioned
splash of balsamic vinegar
pinch of dried tarragon (if you have some)
freshly ground pepper, to taste
1/2 cup olive oil

3 Tablespoons vegetable oil
3 onions, chopped finely
3 stalks of celery, chopped finely
3 carrots, chopped finely
1/4 cup plus 2 Tablespoons all-purpose flour

“Creamed” Tuna Filling

3 to 4 Tbsp butter
1/4 cup flour
3 cups milk
1-2 tsp dried dill
3 scallions, sliced finely
Salt and pepper to taste
Splash of lemon juice
Dash of Tabasco sauce
3/4 cup frozen peas

Lemon Poppy Seed Muffins

¾ cup white sugar
1/3 cup softened butter
1 egg
2 tsp freshly grated lemon rind
3 Tbsp freshly squeezed lemon juice
1/3 cup skim milk
1 ¼ cups Canadian whole wheat flour, or unbleached enriched white flour (can use Cornell mix)

1 Tbsp poppy seeds
1 tsp baking powder
½ tsp baking soda (sieved)
1/3 cup yogurt or light sour cream

Cornell Mix for Unbleached Enriched White Flour

To the bottom of a 1 cup dry measure, add:

1 Tbsp. Soy Flour
1 Tbsp Dry Milk Solids
1 Tsp. Wheat Germ

Then fill the cup with unbleached, enriched flour. Use the resulting cup full of flour etc. cup for cup in your baking recipes, for added nutrients!

Marinade for Pork Tenderloin

½ cup soy sauce
3 Tablespoons sugar
2 Tablespoons minced onion
1 Tablespoon chopped fresh ginger
2 garlic cloves, minced
1 Tablespoon sesame oil

Colossal Oatmeal Cookies

½ cup butter, at room temperature
¾ cup brown sugar, packed (I use less than the recipe calls for – about ½ cup)
2 Tbsp. Granulated sugar
2 eggs
½ tsp. Vanilla
