Tahini Sauce

1 cup Tahini
2/3 cup Water
1/2 teaspoon Salt
2 Lemons, juiced
1 Garlic Clove, crushed
1 Tablespoon Parsley, chopped
Put tahini into a bowl.  Slowly drizzle in water, whisking constantly until blended well.  Add other ingredients and blend well.   Add more water or lemon juice if you prefer a runnier consistency.

Ginger Tea for when you’re sick:

2 cups fresh water
1 cup sliced fresh ginger
juice of one fresh lemon
honey to taste

Bring water to a rolling boil.  Add the ginger and the lemon juice, simmer for about 10 minutes.  Strain ginger and add honey to taste.

Curried Chicken Salad

For two Chicken breasts plus two chicken thighs, or equivalent amount of meat:
1 stalk celery, diced
2 green onions, chopped
1 cup very good mayonnaise
1 heaping Tablespoon mango chutney*
2 Tablespoons very good curry powder
1/2 cup toasted slivered almonds

Sloppy Joes (with NO ketchup!)

1 1/4 pounds ground beef
1 1/2 teaspoons coarse salt
1/4 teaspoon ground pepper
1 onion, finely chopped
2 garlic cloves, minced
1 x 14.5 ounce can tomato puree (not tomato paste! sometimes labelled “ground tomatoes”)
2 tablespoons light-brown sugar
1 tablespoon cider vinegar
1 tablespoon tomato paste
