Best Meatloaf

I don’t like ground beef, and I don’t like meatloaf.  That being said, this meatloaf recipe by Martha Stewart’s mother, Mrs. Kostyra is delicious and I actually enjoy eating it!

Lemon Dill Salad

1 head of Romaine lettuce, shredded
3 green onions, chopped
1 or 2 avocados cut into chunks (optional)
Lemon Dill Dressing:
3 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice

Oatmeal Apricot Almond Cookies

1/3 cup butter at room temperature
1 cup packed brown sugar
1 egg
1/2 cup milk
1 tsp. vanilla
1 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 and 1/4 cups rolled oats
1/4 cup wheat germ
1 cup chopped dried apricots

Black Forest Torte

1 1/3 cups flour
1 3/4 cups sugar
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
2/3 cup butter (only butter will work)
4 ounces unsweetened chocolate
1 1/4 cups water

Cuban Inspired Chick Pea Salad

1/2 green pepper
1/2 red bell pepper
1 cup sweet red onion, diced (or another type of sweet onion of your choice)
1 x 16oz tin chick peas, rinsed and drained
2 Tablespoons fresh lime juice
2 Tablespoons olive oil
