one 8” Brie round
1 cup cranberries (fresh or frozen)
1/4 cup packed brown sugar
1 Tbsp water
2 Tbsp chopped green onions
2 tsp lime juice
1 tsp chopped pickled jalepeno pepper
salt and pepper, to taste
toasted pecan halves
In saucepan, bring berries, sugar, and water to a boil; reduce heat and simmer uncovered for 5 minutes. Add onion, lime juice, jalapeno, salt and pepper. Let cool slightly (can be covered and refrigerated for 3 days).
Place Brie on an ovenproof serving dish. Spoon chutney over top. Bake in a 350F oven for 10-15 minutes, or until cheese is starting to melt. Garnish with pecan halves, if using.
Serves approximately 16 people; serve with crackers or flatbread.
