Shortbready Pie Crust

  • 2” slice of butter (off of a 1 lb), softened
  • ¼ cup + 1 Tbsp white sugar
  • 1 ½ cups flour
  • 2 tsp vanilla

Mix butter, sugar, vanilla together. Add and mix in flour. Press into pie/flan pan. Bake at 350F for 20 minutes, then fill with filling that is to be put back in oven to be cooked. If using a not-to-be-baked filling, bake at 450F for 10 minutes.

Sour Cherry Filling for Above

Mix together:

  • 2 cups sour cherries
  • 2 Tbsp cornstarch
  • ¼ to ½ cup sugar

Heat in saucepan until slightly thickened and “clear”. Fill pie crust and bake for about twenty minutes or so. Serve at room temperature.
